Amaranth (Amaranthus spp.) is a valuable medicinal plant widely known for its rich nutritional and bioactive composition. During agricultural processing, large amounts of amaranth stems and leaves are generated as waste, despite their high content of proteins, dietary fiber, phenolic compounds, flavonoids, vitamins, and minerals. This study aims to scientifically investigate the potential of amaranth plant waste (stems and leaves) as a raw material for producing natural food supplements. The research focuses on analyzing the chemical composition of the plant waste, identifying bioactive compounds, and developing safe and effective processing methods. The use of amaranth waste for food supplement production can contribute to waste reduction, sustainable resource utilization, and the development of functional food products with health-promoting properties. The results of this study may provide a scientific basis for the industrial application of amaranth plant waste in the food and nutraceutical sectors
